Tip: Cheese Course
Try an “elegant cheese course” as a pre-course to dessert. Serve with fruit or other sweet accompaniments such as chutney, fruit confections and honey.
Tip: Storing Cheese
Fresh cut cheese is best – try to cut only what you intend to serve. Store uncut cheese in waxed or parchment paper, or use clear plastic wrap (colored wraps can leave odors).
Tip: Cheese Storage
Re-wrap cheeses often to preserve freshness. Use tin foil for blue cheeses. Cheese should also avoid prolonged exposure to moisture and air.

Recently, we brought three classics back into our repertoire: Mycella Danish Blue Cheese; Danbo With Caraway Seeds; and Danish Havarti (similar to Tilsit).
Mycella Danish Blue (Denmark)
Pasteurized Cow’s Milk, 2/3 lb
“Strong blue veins weave their way through a very sweet paste studded with slight crystallization owing to its six months of aging.” Blue Cheese category winner at the 2010 World Championship Cheese Contest.
Serving Suggestions: Serve as a dessert cheese with fruit and a sweet wine.
Danbo With Caraway Seeds (Denmark)
Pasteurized Cow’s Milk, 1/13 lb
“A soft, square cheese with small eyes (similar to Havarti) dotted with whole caraway seeds.”
Often referred to as “King Christian” cheese.
Serving Suggestions: Enjoy as an appetizer with your choice of charcuterie, olives and cornichons. Slice onto your ham, turkey, roast beef or corned beef sandwich or Panini.
Danish Havarti (similar to Tilsit)
Pasteurized Cow’s Milk, 1/9 lb
“A washed rind, loaf-shaped cheese with a buttery, nutty, and somewhat tangy flavor.”
Serving Suggestions: The firm paste holds its shape for cubing or slicing, but can be melted. Enjoy as an appetizer cheese with a bold red wine; add to salads for a change of taste and texture; or use it on your favorite Panani instead of traditional Cheddar or Havarti.
